Oaxacan Food Terms

Clayuda = Huge, handmade corn tortilla.
Tasajo = Salted beef round, thinly sliced and grilled.
Chorizo = Small, round pork sausages flavored with spicky chile sauce and herbs.
Cecina Enchilada = Spicy chile paste marinated pork leg, thinly sliced and fried.
Quesillo = Oaxacan string cheese.
Mole = Rich and spicy chile sauce or mixture.
